{Drakensburg Gardens Golf and Spa Resort}

I have to let you all know about this gem in the Berg. We went there for a weekend away for our 3rd Anniversary.

They have everything you need - nice restaurants, lovely rooms and a Golf course! The first Tee box is just to the right of that beautiful picture.

{Chocolate fridge bars/cake}


These are sooooooooo bad for you but oh my goodness they are a perfect snack size piece of heaven!!!

Ingredients:
Makes 15 squares / bars

250g butter
2 tablespoons best quality cocoa
1 egg – whisked
500g icing sugar – sieved
1 Tablespoon Vanilla Essence
1 x 150g packet Tennis Biscuits

Instructions:

Melt the butter in a medium pot over a medium heat. Whisk in the cocoa and turn off the heat. Gently & slowly whisk in the egg, then whisk in the icing sugar and vanilla essence. Crush the Tennis biscuits, or break them into the chocolate mix. You want a variety of sizes, but nothing bigger than about a R2.00 coin. Stir the crushed & broken biscuits into the chocolate mix then scrape the mix into a appropriate size dish that has been greased & lined with wax paper. Refrigerate overnight.
Cut the bars whilst still in the dish, then lift them out and take it easy! ;)

{Butternut soup}



Got this recipe from my sister-in-law Kirsty...thanks!


 Ingredients
1 butternut
1 Onion
1 Orange
3 TBS flour
1 tsp Nutmeg
1 tsp curry powder
1 chicken stock in 3 cups boiling water
1 cup milk


Instructions
Fry onions in butter
Add cubed butternut and fry for 3 minutes
Add flour, curry powder and nutmeg
Add chicken stock in water and add milk, orange juice, and grate the orange peel
Simmer slowly for 15-20 minutes
Liquidize
Add salt and pepper to taste and tsp sugar
Add a dash of cream and sprinkle with chopped parsley
Then enjoy!

{Shrimp Fettuccine Alfredo}








Ingredients
2 Tbsp butter
2 garlic cloves, minced 
1 cup milk
1 cup cream
½ cup fresh Parmesan cheese (I used cheddar)
½ tsp salt, to taste 
⅛ tsp black pepper, to taste 
½ tsp oregano 
¼ tsp crushed red pepper flakes, to taste 
1½ Tbsp chopped parsley 
12- 15 shrimp, de-veined
2 cups fettuccine noodles

 Instructions

This was mine!


  1. Cook the noodles according to the instructions on the box.
  2. Sauté the garlic in 1 Tbsp butter over low heat.
  3. Add the milk and cream and cheese.
  4. Let the sauce simmer and bubble but do not let it burn, stirring it constantly.
  5. Add the seasonings and chopped fresh parsley.
  6. In a separate pan, sauté the shrimp in 1 Tbsp butter (can add sweet chili sauce for extra flavor)
  7. The shrimp will turn from translucent to a solid pinkish color when they are done.
  8. Add the cooked shrimp to the simmering cream sauce.
  9. Fry some mushrooms after the shrimp. 
  10. Mix in the cooked noodles, mushrooms and shrimp, then serve the pasta warm.

{Rosehurst}



Rosehurst is a lovely cafe at 239 Boom Street in Pietermaritzburg. It has the most delightful shop that keeps your eyes entertained for however long you like!

A fabulous place to buy gifts for family and friends of all ages. I bought a duck-egg blue metal magnet of Africa with a heart shape cut out by South Africa. It's so beautiful!

The food is well presented and the atmosphere is great! My favorite are the cotton napkins, makes me feel like a real lady! Try and get a table on the grass with an umbrella to give you some shade if you need.

{Herbalife}

My Herbalife Formula 1 shake arrived last week and it was worth every cent!

I am taking it because I want to make sure I have at least one very nutritious meal a day. If you want to loose weight, you supplement the shake for two meals a day.

You can have it as an on_the_go breakfast shake or whenever and however you like! I take it to work everyday as my lunch meal. No more slaving away making cheese and ham sandwiches every morning! I also have a small snack at tea time, like a banana and some peanuts and raisins.

It comes in a few flavours like Vanilla, Chocolate, Strawberry, Tropical fruit and Cookies & Cream.

{Karkloof Farmer's Market}

Can you believe I went to the Karkloof Farmer's Market for the first time this weekend, after living in Hilton for about 22 years. Our friends told us to meet them there for breakfast at 7:30am on Saturday. Ok... I pushed it to 8 because a girl needs her Saturday sleep in!

We had a Moccachino and took a stroll around the stalls looking at fresh bread, fruit, veg, cheese, Wedgewood Nougat and biltong. My favourite had to be the "Mother-in-law's revenge" chili sauce.

With little knowledge of what to wear to a farmer's market -I went with track pants and takkies. I won't do that again! Pumps, jeans and a nice shirt/jacket will do as the market is in a shed that has cement flooring. No mud!

So do yourself a favor and get there on a Saturday morning...just outside of Howick!

{Peppermint Crisp Tart}



Ingredients
1 x packet tennis biscuits
1 x tin of caramel treat
2 x 250 ml fresh cream (or can opt for low fat too)
400g Peppermint Crisp chocolate bars - grated (or Aero Mint chocolate will do)
 


Instructions on how to make it
Cover the bottom of your dish with the tennis biscuits, making sure you cover the whole dish. Place the tin of caramel into a mixing bowl and mix until smooth.
In a separate mixing bowl, whisk the cream until stiff peaks form.
Add the whipped cream and 100g of the grated peppermint crisp chocolate to the caramel and mix well.
Remember you are going to layer the tart, so don’t use all the mixture at once.
Spread the mixture evenly over the tennis biscuits.
Then add another layer of tennis biscuits and caramel mixture and continue until you reach the top.
Sprinkle the remaining peppermint crisp over the top and place in the fridge for 1 hour to set.
